Chia Seed Tapioca Pudding

Made it this morning for breakfast and it was delish!

3 tablespoons of chia seeds
1 cup of milk ( I used chocolate almond milk)

Combine together in a bowl and let sit for 30-40 mins, stirring occasionally.
The chia seeds will expand and turn into a tapioca pudding consistency.
Enjoy!

**Lasts up to 48 hours in the fridge.
**Amazing source of fibre and Omega 3's.
**Super filling.

    I tried this a while back and forgot I have some more chai seeds.

    I just whipped my batch up. Super easy and yummy! Thanks for reminding me I had some. Lol. ????

    I love the chia seeds "pudding"!! I add pumpkin and vanilla soy milk and its a great breakfast (although it looks a little strange).

    Just made a variation of this at lunch-
    Chia seeds, milk, cinnamon, splash of vanilla, splenda
    Might try granola next time too!

    That sounds delicious! I'll have to pick up some chia seeds and try it out. I've never had them before so I'm not really sure of the flavor, can anyone describe what this would taste like if I used regular old skim milk instead of flavored milk? Is it tasty on its own or does it need fruit/cinnamon/etc?

    I made this one a few weeks ago and it was SO good. Very comfort food-y. :)

    Ingredients:

    3 scoops of Chia Seeds (approx. 4 Tbsp.)
    1 very ripe Banana, mashed
    A pinch of Cinnamon (approx. 1/4 tsp. or more to your liking)
    A pinch of Sea Salt (approx. 1/4 tsp.)
    1 Tbsp. Unsweetened Cocoa Powder
    1 tsp. Pure Vanilla Extract
    1.5 Cups of Almond Milk (I think I used the unsweetened chocolate one)

    Directions:

    Get out a bowl and add in the banana and mash.
    Add in the Chia Seeds, Cinnamon, Salt and Cocoa Powder and stir a bit. Then add in the Vanilla and Almond Milk. Mix together well.

    When everything is mixed together, cover and place in the fridge for a few hours, or overnight (I did overnight).

    A serving is about 1/4 cup (trust me, this is a lot because it swells) and contains 74 calories, 9 carbs, 4 g. of fat, 2 g. of protein.

    1/3 cup unsweetened coconut milk
    1 tablespoon unsweetened shredded coconut
    1 tablespoon chia seeds
    1 tablespoon chocolate protein powder...

    SO DELICIOUS!

    Love all the different variations!

    I make mine with:

    3T chia
    1 cup unsweetened almond milk
    1 cup coconut milk
    2 tsp vanilla
    dash Allspice

    I keep it in a small mason jar with a lid, in the fridge, for up to three days. Makes a great go-to breakfast with some almonds on top and if I'm running low on protein I can mix in a serving of my vanilla protein powder.
