Recipe Request: 100% Whole Wheat Bread

What are your favorite recipes for 100% whole wheat/whole grain bread? Preferably soft (not necessarily spongy), not dense; high-rising; with a tender crumb; no white flour (hence "100% whole wheat")? In my apprentice home baker's belt I have collected a few tricks for supposedly achieving a loaf with those qualities, but am still seeking that "perfect" recipe. (Bonus if you can relay your experiences using store-bought flour vs. fresh-ground, what grain mill you use and why.) I've already picked Pinterest's brain; now I'm picking yours. (Note: Picking other peoples' brains and picking other peoples' noses are 2 entirely different things.)

    I have made this for years, very good and light. May use red or white wheat. White is milder, red is nuttier.
    Whole Wheat Bread Recipe
    100% Whole Wheat Bread Makes 6 Loaves (using BOSCH Kitchen Machine)
    • 6 C. HOT tap water
    • 12-16 c. whole wheat flour, I grind my own.
    • 2/3 c. oil
    • 2/3 c. honey
    • 2 Tbsp. Dough Enhancer
    • 5 Tbsp. SAF Instant Yeast
    • 1/3 Tbsp. Gluten
    • 2 Tbsp. Salt

    Pour hot water into Bosch bowl. Add approx. 6 cups flour and remaining ingredients except salt. Use the (M) momentary switch to mix well. Add approximately 5 more cups four and the salt. Turn to speed 2 and continue adding flour ¼ cup at a time until dough pulls away cleanly from sides of bowl. Continue kneading on speed 2 for another 5-6 minutes.

    Oil/grease hands and counter. Divide dough into equal portions and shape into loaves. Put into well greased pans and let double in size. (you can preheat your oven to 150, turn off for a few minutes - this makes an ideal place for rising bread!) Bake at 350 for 25-30 minutes or until golden brown. Cool on wire racks. Top of loaves can be brushed with water or butter to keep crust soft.

    Dough can also be used to make rolls, pizza crust, cinnamon rolls, breadsticks, hamburger buns, etc… ENJOY!
