Salmon sides?

Making salmon and asparagus for dinner, what else could I make to go with it?

    I always serve cucumbers and onions in italian dressing with the salmon.:wink:
  • Quinoa
  • I slice up a sweet potato, dip it in an egg white and sprinkle seasonings (I use chili powder, paprika and garlic) and bake at 350 for about 20-25 minutes. If they aren't crispy enough, turn off the oven and leave the door cracked open for 5-10 minutes. They are so good! I'm actually making this tonight with salmon too.

    last time i did paprika potatoes- boiled a few small potatoes which i had chopped into small chunks. once cooked until still firm ( not so much that they mash themselves) i put them in a bowl and used a very small amount of dairy-free spread (about 1tsp) and added about 1 tsp of smoked paprika powder, and a tiny dash of cayenne pepper.

    not too spicy and worked with the herbs and lemon i had seasoned the salmon with during cooking.

    I second the quinoa! Had this last week and it was delicious.
  • Quinoa cooked in 2/3 chicken broth / 1/3 apple cider. Finish by added chopped walnuts, chopped spinach, and crazins
