Easy Protein Pancakes

A staple in our house, these are easy and yummy!
Full of protein they take care of the carb cravings and are low cal:
3 egg whites
1/2 cup oatmeal
cinnamon and/or pumpkin pie spices to taste
blend in blender until the consistency of batter (make thicker with more oatmeal or thinner with water to your taste)
cook in the pan just like regular pancakes
top with fresh fruit and yogart
Mmmm - they are SO good

Interesting. I'll do a macro workup on these and see how they compare to the ones my wife makes, as well as the Met-RX Protein Pancake mix we tried.0

Sounds tasty. I've been doing one with 1 egg, 1 very ripe banana and 3/4 scoop of vanilla protein powder and a dash of cinnamon. I may try adding the oatmeal and see what it does. Have you posted to the recipe database? I have a few tagged under "Darkangel's Recipes".0

I make a similar pancake with 1/3 c. plain quick oats, 1/3 c. low-fat cottage cheese, one egg, and a heavy dash of cinnamon. Mis and cook up in a little butter on a non-stick pan. Yummy!0

I make mine with 2 scoops of chocolate protein powder (they are protein pancakes, after all) and cocoa powder, then make a peanut butter sandwich out of them0

This sounds AMAZING! I just bought some more frozen blueberries and yogurt. If my eggs are still fresh I think this will be breakfast tomorrow!0

I remember making something similar years ago but I think it had cottage cheese in it...I want to try this recipe - I just love pancakes and oatmeal, too, so I bet I will like them!0

I made these yesterday and they turned out kind of bland, but I did not have pumpkin. I used cinnamon and vanilla. They had an odd'ish texture, which is to be expected. Also, I blended it in my Vitamix, which was probably overkill, and it ended up being two medium pancakes, which I topped with a blackberry-raspberry compote. Come to think of it, I coated the pan with that butter spray, so maybe that's what affected the texture.
That being said, this recipe could be a base for something very tasty and healthy. For anyone who ever skis Windham or Hunter NY, there's a Country Store that makes Oatmeal Cottage Cheese pancakes. I believe this could be used for that base.
So, it served its purpose which was to fulfill my dietary needs, but I would work on jazzing it up. Also, I think the pumpkin addition would probably taste better. I'm looking forward to playing around with this!0
