I've been baking again..
Experimenting with a few different concoctions and today these were the result.
Whole Wheat Flour 1/2 cup
Baking Powder 1 tsp
Bicarbonate of Soda, 1 tbsp
Applesauce, sweetened 1/2 cup
Sunflower Seeds 10g
Pumpkin Seeds 10g
Dried Cranberries 30g
Water 1/2 cup
Pre-heat the oven to Gas mark 1 (275 Fahrenheit or 140 Centigrade)
Mix together the flour, baking powder, bicarbonate of soda, applesauce and water.
When thoroughly mixed add the cranberries, sunflower and pumpkin seeds. Mix again.
On baking trays that have been greased (0 cal/low cal butter spray/oil) spoon small tablespoons of the mixture and flatten them out slightly to look a bit like a circle. (Or odd like morphed shapes some of them turn out like.)
Place in oven for 45 minutes until brown and slightly soft, but with a crispy texture.
Leave to cool and then enjoy.
Makes a batch of 18 different shaped/sized cookies.
1 cookie = 1 serving:
Calories 28
Total Fat 0.5 g
Saturated Fat 0.1 g
Sodium 30.6 mg
Potassium 14.2 mg
Total Carbohydrate 5.7 g
Dietary Fiber 0.7g
Sugars 2.4g
Protein 0.7g
Enjoy as a addition to breakfast or as a quick breakfast, grab a few cookies. Snacks and so forth.
