Anyone got any good ideas for healthy Super Bowl Snacks to munch on during the game? Wanting to have something besides carrots and celery sticks! :tongue:

    Kale, spray on olive oil, season. Bake at 350 for 17 mins.

    Try it, you'll never want potato chips again.

    Aside from the other, non-healthy options, my family demands kale chips, artichoke/spinach dip with honey whole wheat Special K crackers (I'm addicted), greek yogurt and onion dip with veggies, and stuffed jalepenos with corn flake batter.

    My wife told me yesterday that she wants "real pizza," meaning "not pillsbury crust or turkey pepperoni and not made in our own kitchen." Which I'm OK with. Moderation, right?

    Aside from that I was thinking about some buffalo chicken wontons (wonton wrapper, a little shredded, cooked chicken breast with some buffalo sauce and a bit of cream cheese, baked at 350 for 10 minutes or so, I'm going to make it up as I go) and maybe doing the same thing for some cheese sticks. We might do that for lunch.

    Otherwise it will just be the pizza and maybe a beer or two.

    We make everything up before kickoff.

    >Sweet Popcorn, Popcorn, Kale Chips

    >Shrimp & Cocktail Sauce
    >Lettuce Wraps: Fill Large Leaf Lettuce with shredded shrimp or white fish with minced vegetables
    ~Pre mix fish & dice down vegs & use some mayo to hold it together

    >Chicken or Beef Chilli in slow cooker
    >Brown Rice if want for chilli

    >Kabobs
    : Beef Cubes with mushrooms & green peppers
    : Hawaiian Chicken> Chicken with Pineapple cubes
    ~ Marinate meat overnight in Teriyaki sauce.

    Dip & Nibbles:
    >Dip: Greek Yogurt with worcestire sauce & cayenne pepper or whatever kick you want in it!
    >Kale Chips, Sliced Red Peppers- Zucchini or Yellow Squash Slices- English Cucumber Slices

    Recipe for Sweet Popcorn: Makes 6 servings
    3 tablespoons coconut oil

    3/4 cup popcorn kernels

    2 tablespoons honey, or more to taste

    salt to taste

    1 pinch ground cinnamon, or more to taste

    Directions
    1. Heat coconut oil in a large pot over high heat. Drop 3 popcorn kernels into the hot oil and place a lid on the pot; cook until 1 kernel has popped. Remove the lid and pour in the remaining popcorn. Return the lid to the pot and cook popcorn, shaking pot back and forth over burner, until there are 1 to 2 seconds between pops, about 5 minutes.

    2. Quickly transfer popcorn to a large bowl; evenly drizzle honey over popcorn. Add salt and cinnamon; toss popcorn with your hands to coat evenly.

    Prep: 10 mins Cook: 5 mins Ready in 15 mins

    Grin, I going to do some exercise at work, walk the floor and go up 7 flights of stairs etc, and have super tiny breakfast and lunch so i can have pizza n wings... thats how i roll.. :)

    It's ok if folks want to smack me in the back of the head.. :)
