Banana Oat Bars

I can't take credit for this recipe - I got it from a recipe card from Whole Foods! But, they are DELICIOUS!

2 mashed overripe bananas
2 cups oats
1/2 cup pitted, chopped dates (or raisins) - i added both
1/4 cup unsweetened applesauce
1/3 cup shredded coconut
1/2 cup chopped walnuts (i omitted)

Mix all ingredients together, grease a 8 x 8 pan, press the mixture into the pan, bake for 30 minutes at 350 degrees. These make 9 bars (they're big servings!)

Nutritional stats are great!

Calories: 146
Fat: 2.2
Sodium: 8.5 mg (whaaaat!)
Carbs: 40.8 grams
Fiber: 5.8 g
Protein: 3.0

This is a great breakfast for those on the go - it took all of about 5 minutes to prep and make. I'll put them into the food database as Oatmeal Banana Bars

    Thanks for the recipe! I love that it has no added sugars, only the sugar from fruit. I will use the sunflower seeds instead of walnuts and will grate an apple for the applesauce part. Nuts are a good addition since they add a portion of healthy fats and some protein too. Without nuts, it's a bit too much carbs. :wink:

    Answers to questions asked:

    1. The sugars are 12 grams - however, it is all from the fruit! No added sugars!

    2. They are filling! They have a lot of fiber, however you might want to pair it up with a protein in the morning (shmear of peanut butter, hard boiled egg, etc).
