Zucchini Brownies

My friend just shared this recipe with me. Thought it was great & had to pass it on 
Preheat oven to 200 degree C
1 zucchini, grated
2 eggs
2 tbsp flour (you could sub with rice, coconut, spelt or almond flour)
3/4 cup almond butter
1/4 cup honey
1 tbsp vanilla extract
1 tbsp cinnamon
3/4 cup cocoa powder
Mix everything together, pour into a pre-greased (I usually use cooking spray) 9x13 baking pan.
Bake for 30 mins or until cake is nice and springy to the touch.

Maple syrup should be an ok substitute for honey. I prefer honey as it affects your blood sugar less than maple syrup.
A quarter cup of honey is 260 cal, 70 carbs, 0 fat and 0 protein.
A quarter cup of maple syrup is 200 cal, 53 carbs, 0 fat and 0 protein
