Super Easy Spicy Mashed Potatoes Substitute

I just rediscovered this tonight and had to share it!!! Only 80 calories per cup. So ridiculously easy a frat boy could do it!

One package of frozen butternut squash put into a quart soup container. Put a 1/4 cup (or so) of water in the bottom. Quasi-cover and microwave for 3 minutes.

Add a couple tbsp minced onion (I used the spice cabinet kind), 1 tsp or less of minced garlic (I again cheated with the jarred stuff), a dash of salt and several shakes of hot cayenne pepper. Mash it all up, stirring with a spoon. Microwave again for another 2 minutes.

Top with 0 calorie spray butter...

OMG I'm in love with this...I'm almost inspired to make a vegan shepard's pie with it.

    Ohh...warning...my cooking quantities (except for the calories) are NOT exact. I cook like a 4-year old...That might be too much water...i just kind of wing it making sure to not over water it but also to have enough in there that it gets mushy.
