    I think I"m going to make myself a big salad for dinner. We have home made turkey pot pie but I'm not in the mood for it.

    Taco salad made with leftover seasoned ground turkey (from tacos on Thursday).

    Other faves around here are chili made with ground turkey, and white chicken chili.

    Have not figured it out yet... had a huge whole wheat turkey sandwich for lunch.

    Simple grilled tilapia, steam veggies with spices and light oiled pasta.

    Light And Easy Turkey Tenderloin

    Preheat oven to 400 degrees
    On a 12x 16-inch foil rectangle, place carrots; top with tenderloin.
    Arrange onions and pepper slices over tenderloin.
    Sprinkle with garlic powder, rosemary, salt and pepper.
    Fold edges of foil up to form a bowl shape.
    Pour wine over ingredients.
    Bring two opposite foil sides together; fold edges over and down to seal.
    Fold short ends up and over.
    On a small cookie sheet, place foil bundle and bake 20 to 25 minutes or until meat reaches 170°F.
    Check for doneness by opening foil bundle carefully to insert meat thermometer in thickest part of meat.
    Ingredients:

    1/2 cup julienne sliced carrots
    1 turkey breast tenderloin
    2 green onions, sliced
    2 slices red or green bell pepper
    1/8 teaspoon garlic powder
    1/8 teaspoon dried rosemary leaves, crushed
    (1/8 teaspoon salt or no salt )
    Dash pepper
    1 tablespoon white wine

    I'm making a chicken thigh skillet. It's boneless skinless chicken thighs with rosemary and garlic, cooked in a cast iron skillet with red potatoes and carrots. <3

    This was dinner yesterday. At out. Chorizo Meatloaf, veggie meddle, and smashed taters. Of course, to keep anywhere close to a calorie budget, only 1/3 gets eaten at a sitting...but oh so good.

    Made a quick and easy curry with some wafer thin sliced beef and added onions and peas served with a little rice.

    Campbell's Healthy Choice soup, chicken with whole grain pasta. Plus some kind of sandwich on a deli slim.
