Nappa Cabbage Salad - HEALTHY & FILLING

Last night I had the MOST WONDERFUL Nappa Cabbage salad for dinner. Not only was it delicious, but it was also VERY filling.

FOR THE SALAD - MIX TOGETHER
1/2 boneless chicken breast halves, cooked and diced (you could also use cooked shrimp)
1/4 cup almonds
3 green onions, chopped
1 (3 ounce) package ramen noodles, crushed
1 small head Nappa Cabbage, shredded

FOR THE DRESSING - MIX AND POUR OVER SALAD
2 T Splenda sugar (use more as desired)
3 T Grapeseed oil - or you can use Canola Oil
2T white vinegar

MAKE IT PRETTY - SPRINKLE ON TOP
2 Tablespoons sesame seeds (I used black)
Ground black Pepper to taste

The only down side is all the sodium from the Ramen Noodles. Keep that in mind! If you are really worried about it, substitute low-sodium chicken or beef stock for the seasoning.
