What type of recipes are you looking for? I am a huge fan of this youtube channel, not vegetarian, but I have modified a lot of her recipes to be Vegetarian. http://leansecrets.com/blog/category/nutrition/recipes/ She is all about eating whole, real, foods instead of processed foods.

I like to make a big pot of soup on Sunday, then I have an easy lunch all week.
Start with a couple of cups of vegetable broth, add assorted veggies ( carrots, green beans, broccoli, onion, green pepper, cut up a potato.. What ever you have) add a can of diced tomatoes with juice, beans of your choice drained, cup of cooked rice.
Add spices: salt and pepper along with....cumin and chili powder if you want some spice
Or
Oregano, parsley, basil, make it a bit more Italian.. It's real easy
I have some actual recipes, but I never seem to actually follow one. I just use it as a starting point then adapt according to what I have on hand.0 -

Thanks Ikenn67 -great recipe, sounds super easy! DaniAni19 I'm looking for main courses and the main thing is EASY with little time in the kitchen because I am disabled and unable to stand for a long time to prepare food.0

I had a yummy lunch today....baked spaghetti squash (cut side down, sprayed with Pam) for 30 mins, combined one half-removed "spaghetti" with: 2 oz whole wheat spaghetti (cooked), a little butter/olive oil, Parmesan cheese, and fresh basil. Very simple, but very good!0
