Hungry Girl has a great pulled bbq chicken recipe that you make in the slow cooker. I think the basic ingredients for the sauce are tomato sauce, ketchup, brown sugar, apple cider vinegar,. So good! Look it up!
Otherwise I haven't had much success with my slow cooker. Most stuff comes out tasting the same!
I just found this, thanks to you!! It's nice having all the ingredients available. I think I might just eat it as a side and skip the bun altogether and save the calories.0 -

Hello all! I was wondering if anyone had any good ideas for slow cooker or crock pot recipes that are delicious and somewhat healthy. My husband is not a big health nut, hence the "somewhat healthy" term It's just me and my husband, so it's hard to find recipes online that are listed for just 2-4 servings versus 6-8 servings. We are big chicken eaters, so anything chicken would be great! But whatever you have, I'm open to suggestions. I work 8 hour days so I'm looking for something that I could throw together in the crock pot and let it cook while I'm at work. Thanks in advance for the suggestions! :happy:

Slow Cooker Beef and Barley Soup
Ingredients
1 pound stewing beef
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
3 tablespoons extra virgin olive oil
2 cups sliced carrots, peeled
1 cup chopped celery
1 1/2 cups chopped onion
2 cups sliced cremini mushrooms
1 medium zucchini, sliced and chopped
3 tablespoons minced garlic
1 small jalapeño (optional)
2-3 tablespoons fresh chopped thyme leaves
64 ounces reduced sodium beef broth
8.8 ounces barley
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2-3 tablespoons Worcestershire Sauce
1/4 cup chopped fresh parsley
Directions
Place beef pieces into a large ziptop bag. Add flour, salt and pepper. Shake to coat evenly.
Heat olive oil in a large skillet or pot over medium heat. Brown coated beef pieces on both sides until browned, about 5 minutes per side. Transfer beef to 5 quart crock pot on high.
In same skillet beef was browned, add 2 more additional tablespoons of olive oil. Saute carrots, celery, onions, mushrooms, zucchini, garlic and thyme. Cook and stir for about 10 minutes.
Transfer to crock pot. Stir in beef broth, barley, salt, pepper and Worcestershire sauce. Close with lid and cook on high for 3-4 hours. About an hour before soup is done, stir in fresh parsley. Serve with crusty bread.
Makes 8-10 Servings

My slow cooker is on right now--I'm making some lovely pork ribs for dinner tonight! Here's Melissa Joulwan's recipe:

Ingredients:
3-4 pounds pork or beef ribs
salt & ground black pepper
coarse (granulated) garlic powder
Chinese five-spice powder
2 tablespoons rice vinegar
1 tablespoon coconut aminos (you can use soy sauce if you'd like)
Directions:
1. Lay the ribs on a cutting board and sprinkle generously with salt, pepper, and garlic powder. Now rub a good amount of five-spice powder onto the ribs. I didn’t measure, but I was pretty aggressive with it; the top of the ribs were pretty evenly brown with powder.
2. Measure the rice vinegar and the coconut aminos into the bottom of a slow cooker. Add the ribs, cover, and cook on high for about 6 hours or on low for 8-10. Really, you can’t cook them too long. They’re ribs; they’re very forgiving.
3. Chill the liquid left in the bottom of the slow cooker so the fat separates. Bring the remaining liquid to a boil, simmer for a few minutes, then use as a dipping sauce for the meat.0 -

I just found out that you can steam a whole spaghetti squash in the crockpot. I could eat spaghetti squash every day of the week, and I only have ever baked it on a cookie sheet. It takes SOOOO long to bake tho, and when I get home from the gym (after working 9.5 hours) I'm starving and don't have an hour to wait!!!

I like making soup in my crockpot! Probably sounds weird, but it smells so good and when I get home it's ready. I borrowed this recipe from Skinny Dip Noodles website. Sometimes I add extra chicken and save it to make chicken salad.
Lemony Chicken Noodle Soup (serves 4)
2 bags Skinny Dip Noodles, any shape (I use Angel Hair or Rice Pearls)
6 oz boneless chicken breast, no skin
4 cups chicken broth
1 cup sliced celery
1 cup sliced carrots
1/2 cup diced onion
1 tablespoon lemon zest, minced
1 teaspoon dried thyme
Heat small nonstick skillet on HIGH. Coat chicken breast with cooking spray. Place in skillet and cook until brown, about 4 minutes. Combine broth, celery, carrots, onion and thyme in a slow cooker. Top with chicken. Cover slow cooker and cook on HIGH until tender, about 4 hours. Transfer chicken to a cutting board and let cool briefly then shred. Add drained noodles, green onion, lemon zest and chicken to the slow cooker and cook 10 minutes. Season with salt & pepper and serve.

My fav is this or should I say our family fav is.....
Paprika chicken
3 large chicken breasts cut up into half
1 carton of Passata or 1 tin of toms blended into Passata
1tsp onion powder
3 -4tsp of paprika
1tsp of garlic powder/granules
1/2 chicken stock cube
2tbsp of natural of yoghurt/ creme fraiche
Parsley chopped -optional.
1tsp of sweetener optional
Put all ingredients in the slow cooker inc the stock cube and crumble it and mix. Leave out the chicken.
Brown meat, I do mine on the griddle pan.
Put chicken in slow cooker low 6 hrs high 2-3 hrs0
