Eggplant.....

I have been avoiding buying an eggplant because im afraid if will just go to waste before i figure out something to do with it. So i have been searching recipes and reading posts on here about how people make them and i have decided that on friday when i go to the store im definitally buying an eggplant!!!! If anyone has any good ideas on how to use it im all ears!!!

Eggplant is one of my favorite veggies! Eggplant parm is my favorite! but even just sliced and grilled eggplant with a little EVOO is really good too! Just make sure you Do peel the eggplant, and it is essential to 'sweat' the eggplant beforehand for at least 10 minutes, then rinse it off, otherwise it will have a funky aftertaste.0

Agree on the parmesan idea. Also like in moussaka but also try it with courgettes onions and tomatos to make Ratatouille to have with grilled meat or pasta or make middle easten type dips like baba ganosh or Zaalouk. You can find recipes for all those on google. I like the later with cheese in a wholewheat quesadilla.0

Grilled eggplant parm is my fav! Slice the eggplant lengthwise (I like to peel it first). Brush both sides with olive oil, season with salt and pepper, then grill until soft on one side. Flip over to cook the other side...while that last side is cooking, top with sliced tomatoes, shredded basil, and mozzarella cheese. YUM!0

I love eggplant! Put olive oil on it, grill it up, and throw it in with whole wheat pasta.0

I roast slices to make lasagna
One layer roasted eggplant slices
One layer spinach mixed with laughing cow cheese wedges
One layer Classico tomato and basil sauce
Repeat
Top with mozzarella
Bake at 425 until cheese is bubbly and brown, about 30 minutes.0 -

I also use it in place of noodles in lasagna.
Slice lengthwise and lay flat on oiled baking sheet. Brush tops with oil. Bake at 375 for about 30 minutes (turning it over once).
If you have time to make it in advance and refrigerate it over night, it is much more tender the next day.0 -
