Looking for idea's please. I am going winter camping this weekend, and looking for menu items. We are group camping with a family with kids. What would you bring that is either pre-cooked, or easy to prepare in the bush.
This is a no electricity,no running water (unless the river counts) type camping, it is in the rain forrest of british columbia, canada, and it is not warm out. So comfort food idea's please.

Oooo, I love camping I really can't offer any advice on dishes since my diet is no different camping than it is at home. It just requires a lot of coolers and ice. Your diet doesn't have to change, most anything can be re-heated over a campfire, or cooked directly in the coals. Google "omelettes in a bag", kids seem to love creating their own!

We do a lot of camping and one of my kids favorites is chicken burritos. All ingredients (grilled chicken, roasted bell pepper, onion, mango, black beans, jack cheese, etc) can be made and packaged seperately ahead of time. Everyone has a tortilla on a piece of tin foil, puts in what they like, roll it up, and let it sit next to some hot coals to heat up. Make sure you rotate them. Keeps your hands warm and works in the veggies.0

All sound good! Veggie sloppy joes are always a good choice. Kids and adults, vegetarians and meat eaters -- everyone seems to like them!0 -
You can do most anything camping that you would do at home.. one of my favorites is take some chicken breats with a small bit of lemon herb marinade, add some red potatoes, onions, mushrooms, broccoli and wrap it all in tinfoil adn throw in the fire and let it just cook in the coals.. you can also do pork, ground turkey, really any meat in there.. good luck0

There's always those Mountain House freezedried meals in a bag. Or you can make your own meal in a bag that you boil...

Assuming you are not back-packing in and will have coolers....
Make soups or chili and freeze - reheat in a big pot over fire or camp stove. Take potatoes, squash, onion and peppers to slice, toss in a little oil, then grill over the coals while wrapped in tinfoil. Grilled veggie and cheese sandwiches are easy on the camp stove too if yours has a griddle attachment. Wash and slice whatever you can ahead of time.

Last time I camped I premade chicken enchiladas and froze them. Each one was wrapped in foil and then they defrosted in the cooler then you just reheat over the fire.
I also pre grilled a veggie mix of mushrooms, zucchinni and onions with balsamic vinegar. These were great as a wrap or on their own, you can stuff it in pita with some cheesse if you wanted and heat over the fire.
Kids love to make pita pizzas when the camp--all you need is pizza sauce (or pasta), cheese and any toppings they like. Wrap in foil and heat over the fire.
I have also found that if you premake and freeze pancakes, wrap in foil by 2's or 3's you can reheat these over the fire and then you have no dishes to clean. I am all about easy, no cleaning when I camp.

Some people, like myself, feel the most at home and free when they are in the wilderness. There is nothing more comforting to me than an open fire and a great view of the valley. No technology, no work.
And if you get good gear, it's more comfortable and fun than I can even begin to describe. We bring wine & beer and eat like kings. It's what I long for.0 -
I brought everyone their own decent calzone pizza, baked at home and reheated in a foil parcel over the fire, filled carefully without too much juicy fillings and they don't go soggy, I put a dough letter on each so we'd know who had what fillings and brushed the tops with sauce before cooking.... pasta or noodle salad, kebabs, boiled and roasted potatoes that are nice hot or cold, cold vegetable rice, spicy stir fried veg that you can put in wraps with hummus for a quick snack. I brought falafels too put into small bread rolls for burgers. Store shredded iceberg in glass jars and you can have salad with them too! I'm jealous, have fun. Oh! I make "sausage" rolls with puff pastry too, delicious but unhealthy0

Take frozen pre-cooked chicken breasts, frozen veges and a box of rice mix. Put every thing together in a pot until the rice is done
cannot forget smores (even if you don't have any)! The kids will not forgive you if you don't make them!!!

It is good for the soul. No phone, tv, radio, or computer. Just the family and me enjoying the outdoors. Learning to eat healthy while I camp will be my challenge.0 -
We love to camp. Our last trip I vowed to eat healthier and it worked. Although I've given up camping in a tent we go in luxury style with our toy hauler 5th wheel.
A few standby recipes:
1 - 4 can be made ahead and are my healthy meals

2) Any kind of hummus - can be used in tortilla sandwiches - think roasted red bell peppers, hummus, cukes, spinach leaves

4) Yotam Ottolenghi's vegetable paella http://recipes.wikia.com/wiki/Multi-vegetable_Paella (if you're adventurous this would cook up great in a paella pan over the campfire - you could really impress your fanclub!
5) Burrito pie - husband loves this one - fan favorite too. Crowd pleaser. Not sure on calories or healthy scale though. Can be prepared and baked ahead and reheated over campfire in aluminum packets

Pulled chicken or pulled pork. Precook it and just heat it on the fire. Any bread/tortilla/carb option to hold it together

I grew up camping and am now raising my kids to love it too! One of our favorites is "camper dinner" Put potatoes,carrots,onion, celery (maybe mushrooms or whatever veggies you like) in foil with ground meat or bite sized meatballs....add some lipton beefy onion soup mix --wrap tightly & cook right over the fire, flipping the foil packet a few times to make sure nothing sticks...open & eat. YUMMY... I can't wait until it's spring so I can go camping!0
