Super Easy "Caramel Corn"

Hi guys, just made this on a lark... While I was waiting for my bag of 100 cal Jolly Time kettle corn to pop I was thinking about adding cinnamon for a slightly different flavor. But when I opened the cupboard I saw the package of sugar-free, fat-free butterscotch pudding mix I'd used in a smoothie the other day and thought "LIGHTBULB!!"
So I sprinkled a tablespoon onto the freshly popped corn and shook up the bag. It tastes SHOCKINGLY like caramel corn! Whole bag - with pudding mix - is only 125 cals! DELISH!! (Now I want to try chocolate, cheesecake, etc, and see how those turn out!)
P.S. Shared some with my mom, then had to make her and my dad (also on MFP) each their own bags! :)

    That sounds REALLY good. I have a co worker that makes caramel corn but she uses only the fattest of the fattest ingredients. It is AMAZING but I can't eat it.

    I've used hot chocolate powder on popcorn. :) Not too shabby. :) I've also used ranch dressing powder too. :)

    sooooo....stupid question, but how do you make the powder stick to the corn?

    orangesmartie, if you put the powder in the bag and shake it up the heat and oil should cause the powder to stick, distrbution may not be completely even though.

    I also like to melt peanut butter and put it on top of my popcorn....the protein keeps you fuller longer and it's freaking delicious

    Ah thanks, i use a popcorn maker without oil, so no wonder it won't stick lol

    Went to the movies today and made a batch of this to take with me to avoid the high calories popcorn there. Was good will make this again
