Almond Meal Pizza Crust

Low carb, gluten free and DELICIOUS! Can't remember where I found this recipe, but it came from a Paleo site.
2 cups Almond Meal/Flour
2 eggs, beaten
2 teaspoons Olive Oil
1 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon ground oregano
1/4 cup grated Parmesan cheese
Preheat oven to 176° C (350° F). Combine all the ingredients and mix together. If the dough seems too wet, you can add a little more cheese or almond flour.
Line a baking sheet with parchment paper and put the dough in the center. Top with a second sheet of parchment paper and roll out to your preferred thickness. {This dough is super sticky, so don’t forget the parchment paper!} Can be rolled out super thin to make a huge pizza.
Bake the crust for 12-15 minutes until the edges are golden brown. Then add desired toppings and bake another 15 minutes or however you like it.

The first time I made this I totally botched it by forgetting it in the oven. lol It was terrible and my house smelled like burnt almonds.0

You can also save on the fat, calories, and cholesterol but replacing the 2 eggs with a flax substitute. You just mix 2 Tbs of flax meal with 6 Tbs of warm water until thick to equal 2 eggs. Plus is sneaks more whole grains into the crust without loosing Omega 3s.0

Almond meal at Whole Foods was $10 for around 2 lbs. I had to pass on that...too expensive.0

I just made this pizza crust for lunch and it turned out perfectly! The only change I made was to omit the salt (as I find real Parmesan salty enough). I also divided the dough ball into 4 for personal pizzas. I cooked one and threw the other three in the freezer.0
