Homemade Tomato soup is great!

I just had the best tomato soup ever! My hubby made it for me from scratch. It just has 40 calories a bowl and it tastes great. I think I just found my new favorite dish!

    I agree - I adore soup. I make a big pot of Parsnip, Carrot and Sweet Potato and it's really gorgeous and lasts me two days. I do all sorts of soups and I find them to be both low in calories and very filling.

    It's very simple:
    This is what you need:
    2 medium onions
    2 small patatoes
    10 tomatoes
    1,5 liters of water
    vegetable stock
    2 tablespoons tomato puree
    1 tablespoon ketchup

    This is how you do it:
    Onion and potatoes in small cubes, braise them with some butter.
    Put in the finely chopped tomatoes (they have to be really red and full of flavor...)
    Don't leave them in too long, the soup will get bitter.
    Add water and vegetable stock and bring to a boil. Let boil for 20 min.
    Blend or mix the soup. Put through a strainer (hope this is the right word, it's metal with tiny little holes). Don't wait with this, the tomato seeds will make the soup taste sour.
    Add tomato puree and ketchup. Done!

    If anyone wants the carrot, parsnip and sweet potato recipe here it is. It's so easy:

    1 Onion
    1 Sweet Potato
    2 Carrots
    1 large Parsnip
    2 vegetable stock cubes
    Half a pan of water

    Cut everything up - put it all in a large-ish saucepan full to 1/2 with cold water (or just covering the veg), with the stock cubes crumbled in. Bring to the boil, simmer for 30 minutes and then blend using a hand blender. If it's too thick water it down a little or add a little coconut milk.


    Easy Peasy. Just use whatever veggies you've got leftover. Experiment.
