CASSEROLES

Anybody have any low-cal or reduced fat casserole recipes? I'm single and I think I'm going to make some casseroles, split them up into TINY aluminum loaf/serving pans and freeze them for a quick and easy meal after work with leftovers for lunch the next day! Please help!!! I would love some recipes!

    I made this (or a very similar) eggplant parmesan recipe a few weeks ago and did exactly as you said, split it into 8-10 servings and froze them:

    I think there was less than 300 calories per serving the way it worked out for me, but you could probably get it lower if you used low-fat cheese.

    I get a ton of recipes from skinnytaste.com - she has casseroles, crock pot meals, etc. that are great. I've not found anything there that I didn't like yet!

    How much fat do you consider "reduced"?

    I just made a Biscuit Beef Casserole tonight, it's 395 calories per serving (8.9g saturated fat), very easy to make, and pretty tasty. Not the prettiest thing to look at but hey, I'm a bachelor!

    I also just created a database entry with the exact stats from the food.com entry, though I personally made it with reduced fat Pillsbury biscuits and reduced fat cheddar cheese (so what I ate was likely fewer calories per serving than the real recipe).

    Cabbage Caserole

    Low fat browned hamburger or turkey, onion, salt and pepper. 1 bag of cabbage slaw mix and top with 1 can tomato soup and water. Bake 350 for about 40 mins. Good and simple
