Eggs- Whaddaya eat in them?

I love, love, love eggbeaters (Publix eggstirs) but i always feel like i wish i could throw something else in them, and i have NO idea what to use. looking for any ideas you guys might have! thanks

When I can't avoid eating eggs I like them with feta cheese and onion, spinach, mushrooms, curry powder, and cayenne, cooked in olive oil. Careful not to let the feta hit the bottom of the pan it burns and sticks like nothing you've ever seen. Curry and cayenne can be a pain to clean up, too. And I like crunchy onions so I usually just add after the eggs are done.0

yum- thx for the ideas guys!!! i have spinach and tomatos, but salsa sounds intriguing too! and i think im gonna get some mushrooms- apprecaite the ideas!!!! time to experiment after i go back to the store!0

Anything as long as you use sriracha haha. Today I melted laughing cow light Swiss cheese in my omelette and topped it with sriracha0 -

Southwestern Egg Beaters omelette with bell peppers, onions, and a small amount of pepper jack cheese is a favorite of mine. Top it with some salsa for a little extra kick. Heaven on a plate.0

You are a genius! Hubbie gets shrimp egg foo yung all the time at the Chinese restaurant. There's some in the fridge now. But it's too oily/greasy for me. Never thought about making my own before!0 -
Diced mushrooms and red bell peppers with fresh spinach out of my garden, if I have some! Delish! Oh and real bacon bits sometimes.0

i LOVE to sautee those little mini sweet peppers and onions and then add some eggs. and goat cheese, chives, mushrooms..... yum!0

Usually just two eggs either basted, scrambled, or poached with just salt and coarse pepper.
If I'm feeling extra adventurous, I'll make an omelette with ham, mushrooms, fresh spinach, and some sort of white cheese (havarti is delicious).0
