Lunch Idea Quick

I have chicken breast thawed and ready to cook...i need a lunch idea for just myself. I don't have any money so it needs to be something that i would already have on hand. I have salad, cucumber, celery, carrots, onions, green peppers, basic condiments, and some frozen veggies as well as pantry staples. please help i don't want to revert to something unhealthy.

    Looks like you have the makings of a great meal there. Grill your chicken, sautee some veggies and have some salad. Then make soup with any leftovers (even the salad greens) and you'll have lunch for tomorrow.

    Don't even think about throwing the breast bone away. Simmer it in some water and spices for a few hours and you'll have some yummy chicken stock for your soup or save it for some other time.

    OK I just thought of something else. Once you are done simmering the breast bone, see if there's any more meat that you can pick off. If you have any mix it with some black beans, shred some cheddar cheese on top and put it in a wrap or a lettuce leaf. If you don't have any beans or wraps, just freeze the little bit of meat left and save it until you have everything needed. There you have 3 meals with one chicken breast.

    i ended up just having a plain old salad...which means i'll be having a big snack and early dinner...i have just plain grilled chicken
