Need dinner recipes...hubby on 1st shift now

My husband just went from 2nd to 1st shift this week and I need some healthy recipes to cook for dinners. I'm not that creative and don't ever seem to have luck finding the exotic ingredients that are frequently included in online recipes. So, I'm hoping to get some pretty easy to make recipes that use common ingredients. Thanks in advance for your help!

Chicken tacos
4 boneless skinless chicken breasts
Pkg taco seasoning
1 can rotel tomatoes w/green chilis
Throw ingredients in crock pot 6 hours on low
Shred when done
Super easy & good as leftovers.
We make quesadillas the next day w/low fat shredded Mexican cheese & find low fat tortilla shells0 -
