Mediterranean chicken with mushrooms and feta... yum!!

This recipe is fantastic! Full of flavor and generally nutritious. The nutrition information listed is for the recipe "as is", but I usually substitute reduced fat Athenos feta and low sodium chicken broth to make it a "little healthier". I use thin cut chicken breasts. And I usually serve it with whole wheat egg noodles, but is probably great paired with couscous or quinoa too!
1Tbsp. olive oil
4small boneless skinless chicken breast halves (1 lb.)
1lb. sliced fresh mushrooms
1 onion, finely chopped
1/2cup chicken broth1
clove garlic, minced1/2
tsp. dried thyme leaves
1/2cup Crumbled Feta Cheese
1Tbsp. chopped fresh parsley
HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 min. on each side or until done (165ºF). Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.
ADD mushrooms and onions to drippings; cook 10 min., stirring occasionally. Add broth, garlic and thyme; stir. Cook 5 min.; stir in cheese.
TOP chicken with mushroom mixture and parsley.
Calories 250 Total fat 10 g Saturated fat 3.5 g Cholesterol 80 mg Sodium 350 mg Carbohydrate 8 g Dietary fiber 2 g Sugars 4 g Protein 32 g Vitamin A 6 %DV Vitamin C 4 %DV Calcium 8 %DV Iron 10 %DV

Whats the approximate calorie change for using the lower fat feta, etc?0

When your cooking them, make sure that you cook them to just done. They only way they will dry out on the stove is if you overcook them.0 -

To the OP
This has become one of my wife and I's favorite recipes. I have altered it slightly and use half a pound of crimini mushrooms rather than a full pound of regular. I think it gives it a little better flavor. Also, I found fat free feta in the commisary and that helps cut a lot of the calories out as well.
