I have an old weight watchers stand by.
Preheat oven 350*C
Get a baking dish that your chop will fit in.
Mix equal parts dijon mustard and soy sauce add a bit of honey. (when making 4 chops I use 1 tbs each of dijon and soy)
Then put on top of pork chop.
Put a little bit of bread crumbs (i have been using panko lately)
Bake for 30 minutes.
The layer of "sauce" keeps the chop moist and the honey keeps the mustard from being too overwhelming. You can also play with your proportions of dijon and soy sauce. I just eyeball it now. A dollop of mustard and enough soy to make the mustard into a paste.

I've made Pulled Pork twice recently, using cheap Pork Loin from Costco.
You can do it in a slow cooker or pressure cooker to keep it moist (I used a pressure cooker).
Cut into big cubes and brown, then pressure cook for maybe 40 minutes. The meat is juicy and falls apart.
I then mix it up with some chili powder,paprika and bbq sauce. You don't need much to give it some flavor.
I then measure out maybe 5-7oz for my meal protein, or mix with sir fry veggies. Two packages cooked together will last me a week.0
