Chicken Fingers - Great Dinner
Had to share (and save for myself)!
Preheat grill or broiler .
Combine approx 2 tbsp each of chili powder, cumin & garlic in a bowl. Press and rub this spice mixture over 1 lb chicken tenders. Place chicken in a baking pan, cover with cooking spray; let stand 10 mins. Place chicken on rack and broil for 15 mins.
Served with a sauce made of an equal mix of NF sour cream and LF Mayo, and a packet of ranch dressing mix. I added to that a little dill, garlic and diced green onion. (Well, I had them handy.) You'll want the cool sour cream dip, because those chicken tenders are spicy!
We served with braised cabbage. Yummmmmm, and low calorie!
