    There is a list of recipes here. I have never made anything with silken tofu but the south beach diet pudding seems like it would be a good start. Good Luck!

    The consistency of silken tofu is like creme caramel. So it tends to scramble very readily.
    One of the only places I would use silken tofu is in a miso soup, which can be, very low cal.
    Remember to add the tofu as the last ingredient and let it stand long enough for the tofu to heat through.
    Alternatively, gently slide the cubes of tofu into each individual bowl and pour miso soup over the top. Cover for a few minutes before serving.

    Alfredo sauce! Throw a package of silken tofu in the blender with 1/4 to 1/2 cup of whatever type milk you use (start with 1/4, blend, check consistency, add more if too thick), garlic, and maybe some parsley if you feel like it. Whiz until smooth. Pour into a pan and heat gently until hot but not boiling. Remove from heat and stir 1/2 cup parmesan cheese into it, plus salt and pepper to taste. Serve over pasta, spaghetti squash, chicken breast, veggies, baked potato--whatever you might usually like a nice creamy sauce with.

    Note: if you're using fresh garlic, saute it in a little olive oil first to remove the raw taste. Unless you like the raw taste. In which case, throw in some extra. Keeps vampires away.

    Stats per serving (assuming 4 servings--depending on what you use it for, you might get more or less than 4 servings so adjust accordingly) from MFP recipe builder, if made with 1 tsp olive oil and 1/2 cup 2% milk:

    128 calories, 8.3g fat, 2.8g sat fat, 4.3g carbs, 11.7g protein

    One of my favorites, Miso Soup, is made from silken tofu. Healthy, too!
