BBQ Chicken

Anyone know of any good, low calorie marinades for BBQ Chicken??

  • I don't know if this fits your needs not exactly a marinade but take 1 can diet cola and 1 cup ketchup - mix in skillet add 6 chicken fillets and let simmer -- the mixture will reduce and thicken.

    Diet Dr Pepper or Dr Pepper 10 gives it a little more 'zing.'
    Also, could add some extra seasoning such as a pinch of garlic, a tblspoon of salsa, etc.

    I grill up about 10 lbs of chicken breast each week for my wife and I to eat. I just use a different rub each time I cook em. We do BBQ competitions and it's a good way to experiment with new rubs. If you're looking for more moisture you can brine the birds. A simple brine is 1 gallone water, 1 cup kosher sale, 1 cup brown sugar, 2T chili powder. Mix all that up and brine your birds in it for 12 hours.
  • I did a marinade for chicken last night and it was yummy, 400g skinless chicken breast , 2 tablespoons balsamic vinegar, 1 clove garlic crushed and 1 teaspoon brown sugar.
    Place chicken in a shallow dish and combine vinegar garlic and brown sugar and pour over chicken. Turn to coat ,cover with plastic wrap and refrigerate for 30 minutes.
    Only 174 cals per serve
    We had this with salad or you can serve steamed veges

    I will marinade chicken breasts in Franks Red Hot pepper sauce (not sure why it's named that because it's not that hot) or teriyaki sauce before baking or grilling. If using the latter, go easy because it's got sugar and tons of sodium.

    Edited to add: if you want barbecue flavor, try the Kraft light barbecue sauce.
