Pumpkin Recipes?

Hey guys, I have an opened can of pumpkin puree (the real stuff) and dont wanna waste it. Anyone got any good healthy recipes for pumpkin puree. TIA!

    My boyfriend loves when I make him this pumpkin granola 'bread' - and it's surprisingly less calorie dense than I would have expected!

    I've never used pumpkin purée myself - just used regular pumpkin - but I find mixing it with stevia and cinnamon is delicious. Just eat it as is; a big bowl of hot, sweet pumpkin. Nom.
  • Stir it into oatmeal with some cinnamon or pumpkin spice in the mornings.
    Include it into shakes with protein powder, almond milk, banana, & spices.
    Make pumpkin pancakes or waffles (there are a ton of great recipes online)
    Mix it in with spice cake mix or chocolate chip muffin mix for a lower-cal dessert option (like this: http://www.aprettycoollife.com/2010/10/chocolate-chip-pumpkin-muffins.html)

    Just a few options. I love pumpkin!

    I freeze leftover pumpkin-- I thaw it out to use later, but it's also good frozen in pumpkin smoothies.

    I made this http://indian.food.com/recipe/spinach-and-pumpkin-curry-327981 , but I used yogurt instead of coconut milk and added diced chicken breast to it. It was pretty good!

    And taking about half a cup of pumpkin and adding half a banana, a cup of milk, cloves and nutmeg makes a nice smoothie.

    Chocolate Pumpkin Muffins

    Box of cake mix
    15 oz pumkin
    1/4 cup milk/soy milk/almond Milk

    Mix together and separate out into a muffin tin and bake according to cake box directions.

    pumpkin + cinnamon + brown sugar
    layered on top of vanilla yogurt mixed with vanilla protein powder.

  • Make a parfait. Mix the pumpkin with some sugar/maple syrup/splenda/whatever and pumpkin pie spice (or cinnamon/nutmeg/allspice) and layer it with crushed up graham crackers and plain greek yogurt. Let it sit overnight before eating. Delicious! You could use sweet yogurt if you like but I find the plain actually makes a better contrast.

    My post-workout lunch everyday:
    350g PLAIN NONFAT greek yogurt,
    61g canned pumpkin,
    1TBSP pumpkin pie spice,
    1 packet stevia (you can use splenda, sugar or any other sweetener - may need to adjust due to strength of sweetener),

    stir those ingredients really well..

    then, at the end, at 5TBSP PB2....and stir so you still have some grit from the PB2 - you get MUCH better PB flavor if you don't fully stir it in (think swirled ice cream).

    This has 329 calories 31g carbs 4g fat, 48g protein!! 14g sugar (natural) 344g sodium

    I have added it to no fat plain greek yogurt with a packet of splenda and a dash of cinnamon....very yummy!

    I add it to meat or bean stews for depth of flavour and thickening without using rice, or potato.....and sometimes you can add curry spices to make a lowfat sauce for meats and veg....hope that helps

    Pumkin protien shake:

    1/4 cup pumpkin
    1 tsp cinnamon
    1/4 tsp nutmeg
    8 oz milk of choice (I use almond)
    1 scoop vanilla whey protein powder

    Toss it in a blender with ice
