Tuna Pancakes - canned tuna, your choice of flour ie regular, almond, coconut whatever, mix with 1 scrambled egg. Grate a little ginger or lime, paprika. Any spices that you like and pan fry them. You can also add chopped spring onions to it. Thats one of my favorites

tuna mayo stuffed avocado -easy enough

    Tuna with baked potato

    Tuna cheese melt

Thats all I got for now

The tuna cakes sound really good. If I'm having tuna for lunch, it's almost always the same - 1 can tuna mixed with 1T of homemade olive oil mayo and 15 rice crackers.

I like mixing boiled potatoes (halved/quartered) with tuna, some olive oil, olives, halved hard boiled eggs, green onions and various spices. It is so delicious. I've also found that tuna with olive oil and chopped tomatoes is pretty good too, and simple!
  • BBQ tuna! Just add a few tablespoons of BBQ sauce and bam! I make mine into a sandwich.

I haven't tried this yet but saw it posted recently and saved it.

    1 can tuna
    1 egg
    Fiesta Lime Mrs. Dash
    Crushed Red Pepper Flakes

Mix and divide into 2 patties. Cook with Pam. Enjoy!

One of my favorites that got me through studying for my RD exam....light and delicious (especially in the hot summer months)

    Lettuce wraps:

    Romaine (or iceberg) lettuce leaves
    Cucumber slices
    Tomato Slices
    Avocado chunks (optional)

Tuna (either white albacore or chunk light in WATER, not oil)
Spicy mustard (the dijon with the seeds is best)-to taste (about 1 Tbsp)
Lemon juice-to taste (About 1 tsp is what I use)
    Salt and pepper-to taste
    Lemon pepper-to taste

Combine the ingredients for the tuna salad. Fill the lettuce leaves with the tuna and veggies. Roll up and enjoy!

I mix it with some avocado and red onion and garlic.. If i'm hungry it goes on bread, if not it's wrapped up in lettuce or just eaten with a spoon.

or add tomatoes, celery red onions, garlic, (pasta if you want it for dinner) and top with a smidge of extra virgin olive oil

I also throw it in salads sometimes.

If I am in a protein bind and feel snackish. I make a single egg and package of salmon with crushed red peper and topped with a Sriracha. Delicious, easy, and healthy :3

Tuna tacos. :) Heat 1tbs coconut or olive oil in skillet. Add diced onion (I do maybe 1/3 cup), 1 diced roma tomato, 1/2 diced pepper and spices (whatever you like for tacos). When the veggies really get going add can of drained tuna. Cook until desired consistency- I like letting everything get a bit singed like fajitas. Finish like regular tacos or taco salad. Quite tasty and probably enough for 2-3 servings.

Also you could make a tuna burger. Mix drained tuna with minced veggies, spices, or even egg (really helps hold it together, as well as other egg alternatives) in a bowl. Get a round cookie cutter, put it on a hot skillet and fill with goodness. Tuna burgers don't hold together as well, so keep in cookie cutter as it cooks.

    Wholemeal basmati rice
Mixed lentils (soaked and cooked) with a few spoonfuls of passata
Packet tuna / smoked salmon trimmings
    Cottage cheese
Sprinkling of mature cheddar or Parmesan
    Microwave for 2 mins

    Cooked Quinoa
Creme freche with the tuna or salmon stirred in
    Stir in cooked sweetcorn

    Cold mashed potatoes
    Chopped white onion
    Freshly chopped chives
    Garlic (if desired)
    Fish
    Spoonful of olive oil
Put the lot in a bowl and mash together
Cook under a grill on in a non-stick pan for great fishcakes

In a warm pan, shallow cook:
Kale spinach garlic and chopped onion
Remove from pan and put in mixing bowl with fish
In a jug, mix eggs and milk (1egg and 100ml of milk per person)
Mix the veg, fish and egg together
Put in ramekins and cool in the oven for individual pastryless fish quiches

    Tuna dip

Fry onions, add tuna and a sprinkle of garlic pepper. Mix. I also add jalapenos because I like them. Pour into a bowl and add just a teaspoon of mayo. I eat this with raw celery.
