looking for quick low meals

i work silly hours ( as carer in the community) so am needing quick low fat but nice tasting meals for myself , partner and 12 yr old son, for when i may only have 2 hrs spare we love chicken ( not beef that much) love all vegetables , i dont cook with oil or cream and cant eat hard cheese, white bread,pasta i grill every thing
but just need a bit of help

  • I made really good black bean burgers and it's really quick to make too.

    1 can of black beans, drained and rinsed (I made my own in the crockpot though)
    1 egg
    3 cloves garlic
    1 tbsp. chili powder
    1 tbsp. cumin
    1 tsp. chili sauce or hot sauce (I didn't add this and it was fine)
    1/2 cup breadcrumbs (I used blended up Old Fashioned Oats)

    Mash up the beans with a fork until pasty and then add garlic.
    In another bowl, beat together the egg, chili powder, cumin and hot sauce.
    Stir the egg mixture into the beans and then add breadcrumbs.
    Mix everything together until its sticky and holds together.
    Divide into four patties and place on a well coated non stick baking sheet.
    Bake at 375 degrees for 10 minutes on each side.

    I add a little sour cream, avocado and pico de gallo on top and it is so good. My fiance likes to eat it on a bun, but I prefer mine without. This recipe can easily be doubled and saved for leftovers too. Hope you enjoy.

    Do you have a crock pot? Many of my easy go to meals are crock pot chicken. Here is one I use frequently:
    4 boneless skinless chicken breasts
    1 can of Campbell's cream of chicken or cream of mushroom soup
    1/2 a packet of Lipton's onion soup mix

    Place chicken in the bottom of the crock pot. Mix the Campbell's soup with the 1/2 pack of Lipton's mix together in a bowl, then spread on top of chicken. DO NOT ADD WATER

    Cook on low for 6-8 hours. When it's done the chicken is so tender you can eat it by itself or easily shred it for chicken sandwhiches, fajitas, tacos etc.

    We do pulled pork in the crockpot. Pork Loin, rootbeer and Sweet baby Rays BBQ sauce. Then we can have pulled pork sandwiches, nachos, etc. I love the crockpot. I make shredded chicken one day and you can use it for anything during the week. I've used it to make chicken enchilada zuchinni boats and buffalo chicken potato skins. I think these are both on Skinnytaste.com.
