Is there a Trader Joe's nearby? Chickpeas are great with their simmer sauces, especially the Thai green chile one.0

Falfel. Dump beans, seasoning and onion if you wish into a food processor. Pulse then take out and add flour 2 tbsp at a time until you can form together easily. Make into small patties and spritz with oil . Bake 350 for 20 to 25 . Stuff into pita bread. Eat.0

If you have some beans and maybe some spaghetti squash you could make a bean & chickpea salad with some spaghetti squash with pesto or olive oil, garlic & grated parmesan cheese. At least that would sound kind of nommy to me0 -

MMmmmm chickpeas! caesar or italian dressing, fresh tomato, chopped romaine lettuce, shredded mozzarella....
Or, in the cuisinart with some tahini, garlic, lemon juice, salt/pepper, fresh parsley...inside a pita with some avocado and tomato?0 -
I saw chick pea soup on Epicurus today!0

Do you have a can of coconut milk? You can make a quick and easy chickpea curry by swirling some curry powder and salt into the coconut milk, adding the chickpeas and letting them simmer to meld flavors. Add some onions/garlic if you want. Serve over rice. Super simple!0

mash up the chick peas, mix with some minced garlic and olive oil for a killer humus dip!
Dip whatever raw veggies, cheeses or meats of choice you have around! Left-over dip does really well on sandwiches, too!0 -
Mmmm...season and bake them...make them crunchy little gems. Put them on top of a green salad...season,simmer and curry them...or use the food processor, garlic, lemon juice salt and pepper, olive or coconut oil if you choose...voila! HUMMUS!! Very versatile.0

My boyfriend's step-mom makes an amazing chickpea pasta dish with diced red bell peppers, mashed chickpeas, fontina cheese, asiago cheese, white wine and vegetable broth (I think). It's so, so good.0 -

This is one of my favourite things to make with chickpeas. It's super easy, pretty quick, and tasty. I usually serve it on top of some toast or something similar.
