Oatmeal and Peanut Butter Cookies

Ran across this recipe online and thought someone may be interested in trying it. It is said that the recipe was created by health and fitness Guru Shaun T, creator of the Insanity and Rockin' Body home workout programs.
Shaun T's Oatmeal and Peanut Butter Ricotta Cheese Cookies
1 tbsp natural peanut butter
1/4 cup old fashioned oats
1/4 cup reduced fat ricotta cheese
2 packets (or to taste) of Stevia
1/4 tsp baking powder
1/2 tsp flaxseed
1 egg white
dash of cinnamon
Directions: Preheat oven to 350 degrees. Line pan with parchment paper. Mix all ingredients with a fork, pressing to mash ricotta cheese. Spoon 5 cookies onto the parchment lined pan. Bake for 10-12 mins, or until tops of cookies start to brown. Makes 5 cookies at 50 cals each.
