300 gram gain - am I doing it right?

hi everyone I seem to have a week with a small gain ( 100-300 grams) and then a week with a loss (1 kg)
I am doing about 1200 cals a day BUT I am not hungry, I would eat above this if I was hungry, I have my diary open in anyone wants a look and I would appreciate any constructive feedback,
(please take into consideration that I have coeliacs so I cannot eat Gluten, Dairy, Garlic, apples, oranges and I am allergic to almonds)
I am doing strengthening and cardio and I can feel that I am more toned now then i was a month ago but a small loss each week would be nicer then a gain. I do need to do some additional cardio through my week however finding the time is difficult
I am almost 29, 5"7 (174cm) and 162 lbs (73.6 kg), my goal is 140lbs (63-65 kg)
I do a pole fitness class every Thursday night and weigh in on a Friday morning, some friends suggested that my pole class as its strengthening may be making me retain water through to my weigh in?
Is my gain muscle then my loss fat?
Also I have completely cut out alcohol for February so I was really expecting a better loss this month.

Just a note, I doubt that your scale is accurate enough that you could register 100-300 grams...0

It's a digital scale, I just go by what it tells me?0
