Easy Impressive Frittata

Here's another recipe I found in "Health" magazine:
Makes one serving, 173 calories!! Half the fat of a typical frittata!
1 cup sliced veggies (onion, tomato, zucchini)
1 egg
2 egg whites
salt and pepper, to taste
1 tbsp crumbled feta or grated parmesan
Preheat oven to 350 degrees
Coat a small nonstick ovenproof pan with cooking spray and saute veggies over medium heat
Whisk together the egg, egg whites, salt, and pepper
Pour into pan and stir until slightly solidified.
Bake 15-20 minutes or until almost firm
Sprinkle frittata with cheese, and bake until firm
