Here are some of my favorite "salads toppings":

    refried beans, chicken and salsa

chicken, feta, raspberry vinagerette or balsalmic vinagerette

lentils with curry, raspberry vinagerette, apple chunks

hard boiled egg, cottage cheese, ranch dressing

tuna salad on top of greens

Grilled strips of flank steak or london broil. Occasional red meat won't hurt. I've never tred tofu on my salad but if its extra firm it should hold up well. Tofu takes on any flavor. I've grilled it with BBQ sauce and it was great. Probably works in a salad as well.

My usual side salad consists of:

    Lettuce (obviously)
    7g of Shredded Cheese
    7g Pecans
    7g Tortilla Strips
    1 sliced radish
    2 chopped baby carrots

I would say try adding some chopped nuts (be careful of how much though) They add a really nice crunch.

If you like avocado you can add that, hard boiled eggs, beets, cottage cheese...honestly you can add anything.

I have a mixed green salad every day for lunch - spinach, parsley, coriander and mixed greens (the herbs are helpful detoxifiers). I add a boiled egg white, pumpkin seeds, strawberries, pomegranate arils, blueberries, mushroom and this week's treat - avacado!

It is delicious, and so filling.

Have fun with salads - there is no *wrong* answer as to what can or cannot go in them. :)

I love throwing on any veggies I need to use up and then using a favorite dressing (I love Bolthouse Farms Honey Mustard Yogurt Dressing when I'm doing that). But lately, my fav combo is:

    Mixed greens
    Chicken
    Pear
    Craisins or strawberries
    Goat cheese
Trader Joe's Champagne Pear Vinaigrette dressing

Sometimes I add a few pecan halves if I want to make it really fancy :-)

    tuna
    cherries
    avocado
    almonds
    raspberry vinaigrette

    Blueberries
    Walnuts
    Apples
    Grilled Chicken
With a citrus dressing (or if you are lazy like me - just squeeze and orange over the apples and toss)

    SO Delicious.

Here are a few other of my favorites:
Chicken BLT Salad (grilled or poached works great) - I like making a BLT salad, with turkey bacon (just had it last night for dinner!). For the 'dressing' I take a small amount of mayo with olive oil, and whisk it with white vinegar, salt, pepper, and then add in chopped tomatoes and cucumbers. It makes the dressing more runny and has a tangy taste. Then crumble the bacon over the top.

Forgot: also use avocado slices from time to time as well as chickpeas. For a change I buy the shredded cole slaw mix with the different types of cabbage and mix it in with the spinach or baby greens mix. I also use the matchstick carrots in the mix.

I like adding cranraisins and almonds to salad ... (it helps add flavor to couscous and quinoa too).

Also I have a favorite salad at a restaurant I go to once in a great while which is lettuce greens, tomato, a sliced rare steak and blue cheese..

Shrimp, crab, salmon, avacado, kidney beans, chopped apple, cilantro.

Add black olives, doritos and ranch dressing and it tastes like a taco salad without the meat.

Here's what I get at the salad bar at work:

greens, carrots, tomatoes, cucumbers, chick peas, chicken breast (or turkey deli meat, depending on my mood), celery, green/red peppers (depending on what is available), italian salad dressing, and I top it with craisins and banana chips. Sometimes I add a slice of cheese or some shredded cheese.

There are other things at the salad bar that I will also incorporate in, but that is my go-to.
