Creamy Power Packed Muesli
Recipe makes 4 servings, 336 calories each
1 1/2 cup (old-fashioned) rolled oats
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup currants or raisins
1/4 cup (chopped) dried fruit, such as apricots, cranberries or dates
2 cups milk, skim, 1% or soy
1/3 cup (plain) low-fat yogurt
2 apples, any kind, grated
1 tablespoon honey, optional
Combine all ingredients except honey in a large bowl and mix well. Cover and refrigerate 1 hour or up to overnight so the liquid is absorbed. Serve drizzled with honey, if desired.
