Made a Chicken Curry from scratch in the slow cooker today, I have to say it is GORGEOUS and so much better than a jar!

    Sounds delish! I made some the other day with chick peas and potato.
    I ruuuuv me some curry, lol! :laugh:

    My sada roti is a different story. I'm still trying to get it to swell properly. I think my user error is in the kneading cause when my mom kneads and I roll and cook, it works just fine :grumble:

    Here's how I make my Trinidad chicken curry:

    1 small onion minced finely
    2 or 3 cloves garlic crushed and also minced finely
    1 package of either bone in or boneless chicken thighs (about 1.5#'s of meat) cut into bite sized pieces
    1 tablespoon of olive oil
    2 plum tomatoes roughly chopped
    1 small hot pepper
    1 can coconut milk
    1/2 to 1 tablespoon of chicken boullion powder (to taste)
    Chief (brand) curry powder
    2 or 3 potatoes diced into bite sized pieces
    1 can chick peas, rinsed and drained

    Method:

    heat large pot on high and add olive oil, cook onion till slightly brown
    add garlic next and then tomato
    add hot pepper (be careful NOT to break it open)
    add chicken and stir well
    add about 1/4 cup of water to curry powder & stir, carefully add mixture to pot, stir well to coat
    add coconut milk and chicken boullion powder, cover and allow to simmer till potatoes are tender
    lastly, add chick peas and stir well, cook for another 5 minutes

    Serve on a bed of hot rice

    There are many types of curries, so the brand does matter. I personally don't like Lall's for this :grumble:
    You can omit the chicken and just use potato with chick peas for a nice side dish with rice. You can substitute any meat you'd like, shrimp is particularly delicious, add last with chick peas.

    Here we go

    Morrisons Value - Tinned Chopped Tomatoes, 2 container (400 gs ea.)
    Iceland - Diced Chicken Cook From Frozen 250g, 250 g
    Generic - Red Pepper ,
    Onions - Raw, 1 cup, chopped
    Sharwood's - Mango Chutney ( 360g Jar 100g Serving ), 2tbsp
    Rice - White, long-grain, regular, cooked, 4 cup
    Carrots - Raw, 2 carrot (7-1/2")
    Spices - Curry powder, 2 tbsp
    Spices - Garam Masala, 2 tsp
    SERVES 4

    Total: 1496 269 10 87
    Per Serving: 374 67 3 22

    Dry fry chicken until brown and add onions, carrots peppers cook until soft, chuck it all (except for rice) in a slow cooker and cook on low all day or high for 4/5 hours

    If you don't have a slow cooker then you will need to add 300ml of water and 2 tbsp tomato puree and simmer for 1-11/2 hrs
