Just curious and looking for more options. What do you top your baked potato with instead of butter and sour cream?

    I like salsa. I also like to use greek yogurt instead of sour cream.

    I also like baked sweet potatoes with black bean salsa that I make. Black beans with Salsa...(Easy and Yummie)

    I like to use a sweet potato. Not even really for nutritional reasons, I just prefer them

    I normally load mine with baby spinach, chicken, tomato, spring onion, avocado, Philadelphia, a sprinkle of light cheddar and some Greek yoghurt and hot sauce

    I add make potato skins and add shredded chicken in Franks hot sauce,a little shredded cheese and green onions. It's like a buffalo chicken potato skin.

    Greek yogurt is the perfect substitution for sour cream. I don't even buy sour cream when we are having friends over. My husband's best friend's wife is such a skeptic when it comes to healthy food. It totally won her over. She is even buying Greek yogurt now.

    Spray butter, shredded cheese, lots of pepper, a dollop of sour cream(or greek yogurt) and SALSA & CHIVES!!! Yummy!

    All of the above, but what I like to remember about potatoes is that you can pretty much put anything on them. I like to think of stuff I would put on pasta and instead put on a potato (plus extras)

    Beef tips in light gravy with mushrooms and sour cream (stroganoff)
    Taco meat topped with cheese, sour cream, salsa, guacamole, etc
    Chicken with alfredo sauce
    Chili and onions (top with sour cream and cheese)
    leftover spaghetti sauce
    Pizza sauce with black olives, turkey sausage, turkey pepperoni, cheese, and onions (also really good stuffed in a portabello mushroom cap!)
    Corned beef, sauerkraut, and thousand island
    Stir Fry
