Omlette with Bolognaise spinach and feta

This is so yummy when you make bolognaise sauce for the family but dont want the carbs from pasta....

Make a thin omlette of a couple of eggs and water, not too fluffy, so dont use milk or cream, keep in a whole circle and lay on plate.

Meanwhile make a pasta meat sauce with lean beef, tomatoes, garlic etc, just like you would make for spaghetti bolognaise.

Steam some silverbeet or spinach in the microwave.


Lay the omlette on a flat plate
Scoop a big ladle of bolognaise sauce in the middle
Place a layer of spinach or silverbeet on top of meat sauce
Crumble feta over top of spinach
Fold over the top of the omlette
Season with salt and pepper

Place the whole plate in a warm oven for about 5 minutes

Yum!!!!

    That sounds lovely! I really like to have bolognaise/chili with roasted veggies. I get over the oil problem by sticking a tiny amount in a ziplock bag and chucking the veg in and rubbing it in that way,it all gets coated and roasts really well. Is also just as good with steamed veg,x
