Do I pay attention to the protein carbs fat percentages?

Before I used have mainly carbs and only very little protein and fat.
Now since I've cut out gluten I seem to have more fat and an average amount of protein . Other days it would be more fat and an some carbs and smaller amount of protein. The fat is always the highest now . My goal is to lose weight. I do exercise 3/4times a week.

The kind of foods I'd be eating so far are fruit , vegetables , fish , yoghurt, unsalted nuts(snack), rice cakes(snack), potato, meat ,salad.

I haven't eaten any junk food or wheat/gluten foods. Is this bad? this confuses me all the time when I see the percentages I try to keep the carbs down as much as I can but they normally come from those foods maybe they're good carbs? The fat is always the highest with the protein being the second highest majority of the time.

You're doing it right. Keep it up!
% of Fat should be highest, followed by protein and then carbs,
Fat fills you up and contrary to current wisdom fat does not make you fat it helps you lose it.

Aim for a minimum of 1g protein per kg of body weight (ideal would be 1g per pound of lean tissue) and at least .35g fat per pound of body weight. Carbs don't really matter and options/experiences vary when it comes to carbs. I find that I lose weight much easier when I limit carbs but I get much stronger and put on muscle faster if I eat more carbs.

It really depends on who you talk to...

    P90x/insanity recommends 50% protein, 30 carb, 20 fat.
Less extreme is a 40 protein/ 40 carb/ 20 fat for higher cardio workout days.

You can Fiddle with the numbers all you want, protein protects lean muscles, etc.
I am eating 50/30/20 right now with the best results I have ever had. This is not a maintance level, obviously, but I am at a 20 year weight low.

Figure out what works for you and what you can maintain to lose the weight you want. Make sure your carbs are complex and you will do just fine.
    Good luck.
