Amazing Eggplant recipe.

1 large onion sliced
1 eggplant sliced thin
1 large tomato sliced thin
1.5 cups of crushed tomato's
2 cloves of garlic minced
Butter Spray
1 bag of FF Kraft mozzarella cheese
Salt to taste
Italian seasoning to taste
2 cloves of garlic minced



1. Saute Onions over medium heat with the butter spray for 7 min. Line bottom of 8x8 baking pan with onions when cooked.

2. Saute Garlic for 3 min. Then add Crushed tomato, salt and Italian seasoning and cook for 10 min. Stirring often.

3. Add layer of sauce to top of onion then a layer of eggplant then layer of tomato slices followed by layer of cheese. Repeat until all ingredients are used with last layer of cheese on top.

4. Cover with tin foil and bake in oven on 425 for 25 min, uncover and bake 10-15 min more.

Using generic ingredients the whole recipe is 816 calories. I used to split it 4 ways.
