Grilled summer fruit kabobs

i have not tried this yet - but figured i'd throw it out. if anyone tries it, let me know how it is!!!!

serving size is 2

1 medium peach, cut into wedges
1 medium nectarine, cut into wedges
1 medium plum, cut into wedges
1/4 cup peach preserves
2 tablespoons butter, cubed
pound cake and whipped cream, optional

on 2 metal or soaked wooden skewers, alternately thread fruits. in a small saucepan, heat preserves and butter over medium heat until butter is melted. set aside 1/4 cup for dipping. coat grill rack with cooking spray before starting grill. grill kabobs, covered over medium heat fpr 8-10 minutes or until fruit is tender, turning and basting with fruit preserves mixture. Serve with cake and whipped topping, if desired, dipping in remaining sauce.

nutritional info, per kabob, no cake or whipped topping.

  • Hey -- The Smuckers sweetened with splenda preserves (peach) is good and has little "aftertaste" fyi! used it with a cream pie the other day!! =) (tart crust though)

    I make grilled fruit all the time -- peaches are amazing! Pineapple is incredible as well.

    And I don't put a thing on them...so if you don't want to do the butter sauce and save calories I can confirm that they are DELICIOUS!
