we are having a neighborhood barbeque on sunday and i don't know what i'm bringing yet. any suggestions?

    3 cups canned vegetarian beans
    1/4 cup catsup
    2 Tablespoons brown sugar



    Directons:

    1. In small (1 quart) casserole dish, combine beans, catsup, and brown sugar.

    2. Cover and bake at 350 until bubbly, about 30 minutes.

    Southwest Salad

    1 can whole kernel corn (or 1 cup frozen), drained
    1 can black beans, drained and rinsed
    1 10 oz can Rotel, don't drain
    1 avocado, diced (optional)
    1/2 tsp garlic powder
    1/2 tsp salt
    1-3 tbsp lemon juice

    Mix and serve! :)


    Or you can do a veggie tray or a nice salad... or watermelon!

    I wish my boyfriend liked beans, those recipes sound yummy!! The following is a recipe that I think goes great with any kind of barbecue fare or chili:

    Hearty Corn Cakes

    1 1/4 cups all-purpose flour
    7 tablespoons SPLENDA® No Calorie Sweetener, Granulated
    3/4 cup stone ground yellow cornmeal
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup skim milk
    1 tablespoon honey
    1/4 cup canola oil
    2 large egg whites

    Heat oven to 400°F (205°C). Grease muffin cups with non-stick cooking spray butter flavor.
    In large bowl, combine dry ingredients and make well. In small bowl, mix milk, honey, oil, and egg whites.
    Add liquid ingredients to dry ingredients and stir just until combined.
    Pour 1/4 cup batter into greased cups.
    Lightly spray (one spray) tops of batter with non-stick cooking spray.
    Bake until wooden pick comes out clean, about 15 to 20 minutes.
    Makes 12 servings.

    Variation: Add 1 cup frozen corn kernels to batter or add 1 drained 4.5-ounce can peeled and chopped green chilies.

    I will usually take a fresh fruit salad on occasions like that. We took one for tailgating this past weekend and it went fast and was the only thing not left at the end of the day.

    I had this with ribs the other night!..I just used light cream cheese and added more dill, chives and parsley!

    Two Ideas come to mind. 1st a spinach salad.
    Spinach, fresh strawberries, motazarella cheese, poppy seed dressing, mandarin oranges There are many variations to this-I think you can find it on Kraftfoods.com The sal;ad dressing really needs to be put on just before serving or it will get "wilted"--It is YUMMY-O
    THe 2nd idea is cowboy baked beans.
    32 oz baked beans
    1/2 lb crumbled ground beef
    5 slices of bacon crumbled
    1 med onion
    1/3 c brown sugar
    1/3 c white sugar
    1/4 c ketchup
    1/4 c spicy BBQ sauce
    1 T mustard
    2 cloves garlic crushed
    1/2 tsp chili powder

    Bake 1 1/2---2 1/2 hours 300*
    THis is a great side dish. My friend often makes it in her pampered chef pottery dish. it is wonderful delish!

    I have made it and varied it a bit. I do not think it needs that much sugar. I also think ground turkey could be used and turkey bacon.

    that's so true. people might think it's boring but whenever there's fruit around, already cut up and ready to munch, everyone goes for it.

    How about broccoli slaw? I make it with equal parts of low fat mayo and vinegar and it is wonderful. My husband cannot stand broccoli, but will readily eat this.

    I make a spinach artichoke dip with multi-grain chips

    one fat free or low fat package of cream cheese
    one box of frozen spinach thawed and drained ( I use a paper towel to get all the extra liquid)
    one can of artichoke hearts ( in water unseasoned)
    salt and pepper
    one onion
    3 cloves of garlic
    1 cup of fat free sour cream
    1 cup of fat free mild cheddar
    1/4 cup low fat Parmesan cheese

    You want to caramelize the onion and soften the garlic, I put them on a cookie sheet ( on foil) with some cooking spray and salt and pepper. Approx 5-10 minutes. Then in a sauce pan add cream cheese,Parmesan cheese and sour cream mix in vegetables( onions garlic, spinach, and artichoke hearts ( which I first chop into more bite size pieces) after it is completely softened. I put this mixture in a crock pot and sprinkle the cheddar cheese on top. This is always a successful recipe, I now bring reciepe card with me to BBQ when I bring this.
