Mushroom and Wild Rice Soup (179 calories per serving - Pic)

I threw this together tonight and one word...YUM! And, it's filling. And it's 179 calories per serving. And it's awesome. And And And...

A few, but not all, of the ingredients

What you will need:

2 tablespoons olive oil
1 yellow onion, diced
3 cups white mushrooms, sliced
1/2 cup water
1/2 cup whole wheat flour
32 ounces of chicken broth
1 tablespoon all purpose flour mixed with some water
8 ounces light sour cream (seriously, if you don't like/don't eat/despise/hate/afraid of light food, use full fat)
salt and pepper
a swirl of soy sauce
1 cup cooked wild rice

Here is what you do:

Throw some olive oil in a pot and heat it, add onions and brown them.Add the mushrooms and cook until they are soft and brown. Add the water. Then add the whole wheat flour and mix in with the mushrooms. Slowly add the chicken broth and whisk until all the flour has melted into the broth. Add your all purpse flour/water mixture to the soup (this thickens it a little bit). whisk/mix. Slowly add the sour cream and whisk. The sour cream may or may not make the soup gratey (not sure if this is a word) but I just whisked the hell out of it until it wasn't really gratey. Add salt and pepper to taste. Grab the bottle of soy sauce and add a swirl to the soup. Throw in the rice. Mix. Soup done.
