Portabella Chicken bake

My grandfather sent me this recipe, and I made it tonight. It was delicious so I thought I'd share.
Ingredients:
4 thawed chicken breasts
8 medium-large portabella mushrooms sliced lengthwise into 1/8" thick strips
3 large sweet tomatoes, diced
4 tsp olive oil
2 tbsp black pepper
8 slices bacon, pan fried and drained and chopped
4 oz fresh mozzarella, chopped into small cubes
2 bunches spring onions, diced
In large frying pan, pour olive oil and heat on medium heat setting coating pan evenly. Cook portabella mushrooms approximately 1 min on each side (just enough to lightly brown each side and no more) then set aside. Do not drain away olive oil.
In medium glass dish, layer portabella strips along bottom. Top with chicken breast. In a separate bowl, mix diced tomatoes, pepper, bacon, and mozzarella then evenly layer on top of chicken. Top with spring onions.
Cover and bake at 350 until chicken is done (approximately 30-40 mins).
Makes 4 very generous portions and is absolutely delicious.

I just figured the calories and for 4 portions it comes out to about 361 each. Much better than I anticipated and sounds DELISH!0
