Low carb pizza - HELP needed

I have found this recipe

and I went out to town and bought the flaxseed - BUT I could not get any parmesan.
I have cheddar - would that do?

Hmmm, not sure. Parmesan is a much drier, harder cheese. The only way to know is to try!0

I'm pretty sure I've used cheddar often before. I keep changing my bases when I make pizza. In a few days I'm planning to try a cauliflower and almond meal base. The flax meal ones are pretty sturdy. Good luck!0

i used cheddar its not as sturdy but i just lift it on the place add some salad and eat with a knife and fork xx im having some tonight0

My experience: paleo bread substitutes are not helpful, especially at the beginning of the Paleo journey. That's a lot of flax, and I won't even eat flax (I don't believe that seeds are healthy for me in large amounts). Even though I do eat nuts, using them to make a crust is too many nuts to consume at one time (ie lots of Paleo recipes that use a nut crust).
There are also crusts that can be made out of cauliflower and cheese. Also, you can press ground meat into a pan, bake, then put toppings on, bake some more (from Well Fed). It shrinks but I'm thinking that baking it in a pie plate with another on top might help with that. The meatza can be made with or without cheese. Since I'm a cheese lover, it has been great for me to learn to make meals without cheese. I eat less and less cheese all the time.
Edit: apologies for coming at this from a Paleo view, since you were just talking "low carb". I'm very low carb too but I do it within a Primal/Paleo framework.0 -
I've actually made that flax crust. I Breath, I'm Hungry is normally a FANTASTIC site (almond flour biscuits are fantastic!!), but that particular crust was awful - cardboard probably would have tasted better.
If you're hellbent on trying it anyway, you can sub mozzarella or provolone for the parm. Cheddar will work as well, but the flavor profile would be a bit different.
I try to stay away from the various "flour" crusts like coconut or almond flour just because the crust is incredibly calorie-dense.
I've made crusts with grated cauliflower, shredded zucchini (really squeeze to remove the moisture!) or spaghetti squash. Sliced zucchini or eggplant make a decent base as well, although i like the slices better as a sub for lasagna noodles. Or you can stuff a portabella mushroom with your pizza toppings.0 -

I have fought with this one before and this is the best "well-balanced" pizza I have come up with. I use the whole wheat pizza crusts that you can buy at Walmart. Top it with all natural pizza sauce, fat free cheddar, low fat or fat free mozzarella, and then I add fresh veggies, turkey sausage, and turkey pepperoni. This last time I made it, I didn't have the fat free cheddar, so I used regular shredded cheddar, and I didn't have the turkey sausage, so I used regular. Even with that, it still came out to 370 calories per slice, with 24 grams of carbs and 23 grams of fat. That may be more than what you are looking for, but to me, that's not bad. The primary difference is in the fat grams with the fat free cheese and turkey sausage. And if you watch what other carbs you take in and you're working out, two slices at dinner or lunch should work just fine! Good luck!0

You could certainly try the crust - I didn't mean to discourage you and judging from the comments onthe site, others did enjoy it. I use a 50/50 mix of grated parm and ground flax to bread chicken, zucchini or eggplant. I add some to meatloaf and meatballs. When I make a zucchini or spaghetti squash pizza crust, I sprinkle in some ground flax to absorb the excess moisture.
You can sub flax in any recipe that called for breadcrumbs. However, I've found that a straight 1:1 substitution is way too heavy, so I'll use 50% flax/25% almond meal or coconut flour and 25% parmesan.
MIM's are good! Just do a search for muffin in a minute. I've also made a hot "seed-real" with chia, flax and hemp hearts - really good when I'm craving some Cream of Wheat.
Store your flax in the freezer - that way you won't have to worry about it becoming rancid before you use it all.0 -
My usual pizza crust is the cauliflower, mozzarella, eggs and seasonings. , , I've used both cooked mashed or riced cauliflower. Very good.
As for your flax seed, as was mentioned use it in a minute muffin. There's a LC flax bread recipe on http://lowcarbdiets.about.com that has my eye and sounds pretty good. Almost like the OMM but bigger. I make "cereal" using Dannon's LC yogurt, pecan pieces, sunflower seeds and flax seed. You can add flax to smoothies.

I posted a pizza recipe a while back. Entire base has 25g carbs and can be split in two - I don't know your carb limitations for the day.

Not an answer to your question but I can attest to the cauliflower pizza crust being delicious. I use flax seed in salad, on chicken, to thicken soups and stews just to name a few.0

Right, I have now found out that flax makes me ill, so I am gonna have to go with the cauliflower or cream cheese pizza.0
