Crockpot Recipe - White Chili w Lentils & Cannellini Beans

Made a batch of this over the weekend to put in the freezer...delicious + it's a great source of protein, fiber and iron.
White Chili with Lentils and Cannellini Beans
2 c dry lentils, rinsed
1 cubed sweet potato
1 c frozen corn
1 c cannellini beans (white kidney beans), rinsed & drained
4 c vegetable stock (6 c if you want it soupier)
1 onion chopped
2-3 cloves garlic, minced
1 16 oz. jar salsa verde
salt & pepper to taste
Add everything to crockpot. Cook on high about 6 hours or until beans and sweet potato are done.
Serves 8
Nutrition Info (per serving): 226 calories, 18g protein, 20g fiber, 35% iron
