Okay, I'm sure this has been posted before, but I just tried it and it worked great!

1 box low fat/cal brownie mix
2 cups pumpkin puree (not pumpkin pie filling).

The result? 12 - 100 calorie brownies. Yum.

You can tell they aren't the real thing, but they are a great placebo!

  • I just read an article about replacing oil and sugar with fruit puree. It said for chocolate recipes, use pureed prunes. I wonder if that would make a difference. I've heard that when you have a chocolate craving, prunes help, who knows I guess it's possible. Haven't tried it, just thought I'd share it.

    someone gave me a good recipe using pumpkin also......pretty good and very moist muffins!

    1 box of spice cake mix
    3/4 cup of water
    1 can of pumpkin (not pie mix)

    I think you cook at 350 degrees for 9-12 minutes.

    You can also sub mashed bananas or applesauce.

    A few weeks ago I made some chocolate chocolate chip cookies with a vanilla cake mix, a little cocoa powder, 2 mashed bananas (I think I had 2 veeerrrrry ripe ones that I was trying to use before they went bad -- yes, to save the 20 cents they cost :laugh:), & an egg & they were freaking delicious at around 50 calories each (the recipe made a lot of rounded-teaspoon full drop cookies so I just added up the ingredients & divided by the number of cookies to get the calorie count -- ymmv).

    I've tried this recipe years ago. It was good but I didn't mix in the pumpkin enough so I just want to add if you're gonna try this, make sure you mix the batter VERY WELL.

    Do you cook this according to the browine instructions? Same temp/time?

    I've made these before, and took them to a Southern family Thanksgiving lunch...nobody knew they were low-cal! It IS difficult to mix, and needs to be mixed thoroughly, but just think of all the calories you'll burn!

    I also made the pumpkin spice cake as my birthday cake about a year and a half ago, and sprinkled walnuts on top. DELICIOUS! And they're so moist too!

    I am making this right now.... used one can pumpkin and one box of the lowest cal brownie mix I could find. I will end up with 12 thick brownies that will be 181 calories and less than 1g fat each.

    What kind of brownie mix did you find that was so low cal??

    other substutions for pumpkin puree are dried minced figs (soften in hot water and drain), no sugar apple butter, prunes (same hot water trick). you get the sweetening without adding sugar and the consistency/density works out great tho i'm no food chemist.
