Sicilian Tilapia

Here's a yummy one I make once a week! It is so yummy and healthy!!!
i borrowed it from Let's Dish, and recreated the recipe as best as I could remember....
we had this tonight for dinner1 i usually serve it with some steamed veggies.

Tilapia (usually get it at the Giant, has two 4.5 oz. pieces in a package)
1 can diced tomatoes
2 teaspoon minced garlic (or to taste, depending if you like garlic or not)
1 Tablespoon bread crumps
1 Tablespoon grated parmesean cheese (i use kraft that's already grated - I'm lazy!)

on a backing sheet with sides, put tin foil on top.
spray the foil lightly with cooking spray
place the fish slices on it
put half of the can of tomatoes on each piece of fish
place 1 teaspoon of minced garlic on top each fish piece on top of the tomatoes
place 1/2 tablespoon of breadcrumbs on top of each fish
place 1/2 tablespoon of cheese on top of each fish

place in oven at 380 degrees and bake until fish flakes - about 35 minutes.

basic nutritional info:
serving size is one piece of fish
calories per serving: 249
fat: 6g
carbs: 19g
protein: 32g

    Thanks for posting this recipe. I DO NOT like fish but am trying to eat it at least twice a week. This looks good because of the garlic, tomatoes and parmesean. I already have all the ingredients so I'll give it a try....maybe tomorrow. I'll let you know how we liked it.

    I'm going to try this tomorrow. I have a couple tomatos and this sounds like it'll work GREAT! Yay tilapia for being super cheap!

    this sounds awesome! i just bought some tilapia and i have never cooked it at home before so i had no idea what to make it with...does it really take 35 minutes to cook? thats seems like kind of a long time

    you can broil it alot faster - 10 minutes per side. but i'm not sure if you can broil it with the tomatoes and stuff on it - no idea how you'd "flip it". so i bake it. you can just keep an eye on it if you think it will be done faster. it all depends on the thickness of the fish you bought, too.

    Normally when I make tilapia its just 20 minutes at 350 degrees. Usually by then it flakes with no issues.
