Our take on a Cajun Chicken Pasta!!!

We tried this today and it turned out great. This was a mix of two different recipes I read (one here I think and one somewhere else on the Internet). We had VERY GENEROUS serving sizes and it is still only 462 calories per serving!!!

The recipe itself (serves 4):

Chicken - Breast, meat only, cooked, roasted, 2 cup, chopped or diced
Ronzoni - 100% Whole Grain Thin Spaghetti, 1 container (12 oz ea.)
Mushrooms - Raw, 1 cup, pieces or slices
Great Value - All Natural Cornstarch, 1 tbsp.
Red Bell Pepper - Red Bell Pepper, 1 pepper
Bell Peppers - Red,Yellow & Orange, 1 raw
Red Onion - Raw, 1/3 cup
Great Value - Fat Free Half & Half (Corrected Feb 2013 Version), 16 Tbsp
Knorr Caldo Con Sabor De Pollo - Chicken Flavor Bouillon, 1 tsp (4g)

Calories per serving: 462

Basically:
Cook the chicken and cut into little pieces, set aside.

Chop the bell peppers (I used 2, one red one yellow). Chop the onions (I ended up switching to green onions in the last minute but this should not affect the calorie count in a significant way) and the mushrooms.

Spray (0 calorie spray of course) a pan and add the chopped bell peppers (sautee in Medium High for a few minutes). Add the onions and mushrooms (you can also add tomato if you want). Sautee for another couple of minutes.

Prepare 1 cup of Chicken Flavor Bouillon (I use the little Knorr cubes, that's what I added for calories but you could use regular chicken broth I guess or light chicken broth). Add 1 Tbsp of cornstarch (I didn't have flour you could use flour) to the chicen broth and then add onto the pan. Then add the cup of fat free half and half (and the chicken pieces). Then wait for it to be a bit thicker (and stir often).

Prepare the pasta, add the sauce, that's it!

    I can assure you it was great! It came out kind of similar to the Lousianna chicken pasta from the Cheesecake Factory (only with about 1/4 the amount of calories :-) )
